Vegan meatballs with sunflower seeds

Vegan meatballs with sunflower seeds, oatmeal, and beans served with a good tomato sauce and pasta. 

Ingredients:

320 g pasta

Vegan meatballs

1 dl sunflower seeds

1 dl oatmeal

6 dl boiled kidney beans

1 small yellow onion

1 tablespoon soy

0.5 teaspoon salt

0.5 teaspoon black pepper

oil, to fry in

Tomato sauce

1 yellow onion

2 cloves garlic

1 tablespoon olive oil

400 g crushed tomatoes

1 tablespoon tomato puree

1 vegetable bouillon cube

2 tablespoons frozen herbs, eg parsley or basil

Do this

Fry onion and garlic in oil in a saucepan. Pour in crushed tomatoes and tomato puree. Add bouillon cubes and herbs. Let simmer for about 10 minutes.

Mix sunflower seeds and oatmeal finely in a food processor mounted with a knife blade. Add the beans and mix a little more. Stir in grated onion, soy, salt, and pepper. Leave the batter in the fridge for at least 20 minutes.

Shape into 20 balls with wet hands. Boil the pasta according to the instructions on the package. Fry the balls in oil to a nice color and fry through. Serve with pasta and tomato sauce.
