Raw cheesecake with banana, dates, and caramel sauce

Luxurious and good vegan cheesecake that you make from, among other things, dates, nuts, and bananas. The caramel sauce of dates, coconut oil, and maple syrup will definitely be your new caramel sauce favorite, not just for this tasty raw cheesecake! Garnish with banana, nuts, coconut, cocoa, and a little maple syrup.

Ingredients: 10 bits


4 dl natural cashews (4 dl corresponds to about 240 g)

1 dl cold pressed coconut oil

2 ripe bananas

1/2 dl maple syrup

2 1/2 tbsp cocoa


2 1/2 dl pecans (2 1/2 dl corresponds to about 100 g)

150 g fresh dates

2 tablespoons cold pressed coconut oil

1 tablespoon cocoa

Caramel sauce

100 g fresh dates

1 dl cold pressed coconut oil

1 dl maple syrup


flake salt

optional nuts

sliced ​​banana

roasted coconut chips

Soak the cashews for about an hour.


Mix the pecans finely in a food processor or a canning mixer.

Peel the dates and mix them with the nuts, coconut oil and cocoa.

Press the nut mass into the bottom of a springform pan, 26 cm in diameter (or smaller, which makes the cake taller).


Melt the coconut oil gently in the microwave or in a saucepan. Peel the bananas. Pour off the water from the soaked nuts.

Mix all the ingredients together to a smooth and thick cream. Stop the mixer from time to time and scrape down the cream from the edges. It takes a while before it becomes smooth. Pour the cream over the nut base. Set the cake in the freezer for a few hours, or in the fridge overnight.

Caramel sauce

Seed the dates. Gently melt the coconut oil in the microwave or in a saucepan. Mix dates, coconut oil, and maple syrup into a smooth caramel sauce.

Take out the cheesecake (if it has been in the freezer, it should be taken out a while before it is to be served). Loosen the mold and lift over the cheesecake on a serving platter.


Pour or spread the caramel sauce over the cake and sprinkle with a little flake salt. Decorate with nuts, sliced ​​banana, and coconut. Drizzle some maple syrup over and powder some cocoa on top.
