Love mums

Love Mums is a real classic with wonderfully good icing that tastes like coffee and chocolate. And if it’s not coconut on top, it’s not Love Mums!

Ingredients: for 30 pieces

Butter 225 g

milk 2 dl

Egg 5

Powdered sugar 4½ dl

Flour 6 dl

Vanilla sugar 1½ tbsp

Cocoa 1¼ dl

Baking powder 3 tsp

Glaze:

Butter 75 g

Strong coffee ¾ dl

Cocoa ½ dl

Vanilla sugar 1½ tbsp

Icing sugar 5 dl

Garnish:

Coconut flakes 1 dl

Do this

Set the oven to 175 °.

Grease and toast a form with a high edge, 25×30 cm or place in a baking sheet paper.

Melt the butter, pour in the milk and let it cool.

Whisk eggs and sugar puffily, preferably with an electric whisk. Sift down wheat flour, vanilla sugar, cocoa and baking powder through a sieve. Add butter and milk and mix everything into a smooth batter.

Pour the batter into the mold. Bake in the middle of the oven for about 20 minutes.

Glaze:

Melt the butter in a saucepan, add coffee, cocoa, vanilla sugar and icing sugar and mix well.

Take the cake out of the oven, let it stand for a while. Spread the icing over the hot cake and sprinkle over the coconut flakes.
